Peach Salsa for a Labor-Less Labor Day
Like most holidays, Labor Day is usually centered around food and fun. Whether you are headed to the lake or beach or sticking around for a stay-cation, easy and delicious recipes are a must. With one month of peach season left, I try to use them on any and everything. This peach salsa recipe is super delicious and keeps for up to 4 days. I like to eat it with plantain chips and on tacos. Peach Salsa
Ingredients:
1 lb tomatoes (I used 6 medium)
1 bell pepper of your choice (I used yellow)
1 jalapeno (omit or use half if you want to tone down the spice)
1 medium red onion
3 large peaches
¼ cup lime juice
¼ cup red wine vinegar
¼ cup cilantro
Salt and pepper to taste
Instructions:
- Cut all produce to desired size. I like mine pretty fine but some people prefer a more chunky salsa.
- Combine all ingredients in a medium bowl. Gently stir to combine. Cover and let sit at least 1 hour.
- Store in the refrigerator.
