I am always looking for quick, easy, and healthy snacks to have at home and on the go. With so many convenient, processed foods readily available at our fingertips, if often takes some planning for the former.
These energy bites meet all of my snack requirements and take less than 5 minutes to make. The great thing is, after the 3 essential ingredients you can literally add anything you want (or have laying around the kitchen). *Bonus* They taste just like cookie dough! You can never go wrong with that.
1 cup nut butter (I prefer almond)
⅓-½ cup honey
1 teaspoon vanilla extract
¼ cup chia seeds
½ cup dark chocolate chips
¼-½ cup chopped nuts or seeds
¼ cup freshly ground flax seeds
Spices of choice (cinnamon, nutmeg, pumpkin pie spice)
½ cup unsweetened coconut flakes
1. Mix the essential ingredients until completely combined.
2. Add all additional ingredients except chocolate chips if using.
3. Lastly, add chocolate chips and mix until just combined.
4. Roll into 1 inch balls and place in the refrigerator or freezer until ready to eat.
